Sauce is Ciao whole peeled run through a food mill with the medium disk with a bit of salt and Calabrian chili oil made with chilies from my garden. Baked on the steel at 545F + broiler for first 2/3 of the bake.

I have been pizza making for around 5 years and have not explored longer room temp ferments. I was wondering if a 24 hour room temp ferment can be analogous to a 48 hour cold fermentation or more? I am not knowledgable about enzymatic activities in regards to all of this and am wondering if anyone is willing to chime in on this.

Coincidentally, I did my first steel cook this weekend using Craig's 4-6hr NY dough. I made a 16" pizza with a thickness factor of .080. I am using King Arthur DMP, which is much stronger than what Craig is using, so I adjusted accordingly. I used .2% IDY, for an approximate 5hr dough at 70F.
