So I went through all the steps of setting up port-forwarding. Confirmed that my ports are open and working. Got back on after a reset and NAT is still strict. Not sure where to go from here. I wouldn't worry too much about it, it seems to run pretty well with moderate NAT. I think it's still running peer to peer too.
